It's running like a restaurant, but it's supposed to be a research center, wherein researchers from the Dutch University of Wageningen want to find out the factors that diversely affect customers' eating habits.
So, they're diverting away from the usual way of conducting survey in restaurants, by which customers are just given survey forms to fill up.
According to the researchers, it's far better than the usual because the customers are able to make unconscious choices.
